Here are some pictures to help you understand how you might like your beef cut. It is important to note that the T-bone steak is a combination of the New York Strip Steak and the fillet mignon. Thuse you can either have T-bones OR New York Strips and Fillet mignons. Our beef are small so I recommend the T-bones.
The butcher is very helpful and can provide you with all of your options.
I recommend putting the tougher cuts of meat such as the flank, skirt etc toward hamburger. You’ll be surprised at how quickly you use up all the hamburger.
Dont forget to request the bones if you want to keep them.
